Tasty Jamaican Jerk Chicken

Makes 4-6 servings

Ingredients (jerk chicken):

  • 4-6 chicken breasts (skinless / boneless)
  • 1 tsp Jamaican allspice
  • 1 tsp nutmeg
  • 1 Tbsp pineapple juice
  • 2 cups rice
  • 4 cups water


  • ½ cup diced pineapple (reserve juice)
  • ½ cup red onion
  • ¼ cup diced red pepper
  • 1 tsp Jamaican allspice
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp lime juice
  • Cilantro for garnish


  • Place rice and water into rice cooker or covered pot along with reserved pineapple juice and cook. For the rice cooker, cook to instructions, stove top, cook for approximately 14 minutes, check for doneness.
  • Preheat oven to 375
  • Mix Jamaican allspice, nutmeg, pineapple juice and pour over chicken. Marinade for 25 minutes.
  • Place on a baking sheet with parchment paper. Place in oven and bake for 30 minutes.
  • For the salsa, combine diced pineapple, red onion, red pepper, Jamaican allspice, cinnamon, nutmeg and lime juice. Mix thoroughly. Set aside.
  • Remove chicken from oven and let rest for 5 minutes.
  • Place rice on a plate, slice chicken and place on rice. Garnish with salsa and fresh cilantro.

Fueling Tips:

  • Chicken breast can be barbequed and can be replaced with thighs or drumsticks.
