Mandarin Quinoa Salad
Makes 4-6 servings
Ingredients:
- 2 cups quinoa
- 4 cups water
- 1 cup chopped celery
- 1 cup chopped carrot
- 1 diced gala apple
- ½ cup chopped green onion
- ½ cup mandarin slices
Dressing:
- ½ cup orange juice
- 1 tsp soy sauce
- 2 Tbsp olive oil
- Pinch of salt & pepper
- ½ cup mandarin slices
Preparation:
- Place quinoa and water in a pot and mix.
- Bring to a boil and reduce temperature to simmer for 20 minutes, stirring.
- Place cooked quinoa to the side to cool. Quinoa can be placed into the fridge to cool.
- For the dressing, mix orange juice, soy sauce, olive oil and salt & pepper. Whisk thoroughly. Add mandarin oranges and set aside.
- Add celery, carrot, green onion to quinoa and mix.
- Add dressing to quinoa salad and mix.
- Garnish with apple and mandarin slices.
Fueling Tips:
- For a savory take on this salad, add roasted beets or brussel sprouts.
