Image of Mandarin Quinoa Salad

Makes 4-6 servings


  • 2 cups quinoa
  • 4 cups water
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 1 diced gala apple
  • ½ cup chopped green onion
  • ½ cup mandarin slices


  • ½ cup orange juice
  • 1 tsp soy sauce
  • 2 Tbsp olive oil
  • Pinch of salt & pepper
  • ½ cup mandarin slices


  • Place quinoa and water in a pot and mix.
  • Bring to a boil and reduce temperature to simmer for 20 minutes, stirring.
  • Place cooked quinoa to the side to cool. Quinoa can be placed into the fridge to cool.
  • For the dressing, mix orange juice, soy sauce, olive oil and salt & pepper. Whisk thoroughly. Add mandarin oranges and set aside.
  • Add celery, carrot, green onion to quinoa and mix.
  • Add dressing to quinoa salad and mix.
  • Garnish with apple and mandarin slices.

Fueling Tips:

  • For a savory take on this salad, add roasted beets or brussel sprouts.
